Cassava (Manihot esculenta crantz) is a major source of dietary energy for human
and domestic animals in many tropical countries. Its starchy staple roots are very rich
in carbohydrates. Cassava plant have anti-cancer properties. In the present study the
carbohydrate characterization of cassava varieties (CO5 and H226) has been explored.
The storage polysaccharides (glucose, fructose, starch, total carbohydrates, fructosan,
phytoglycogen) and structural polysaccharides (cellulose, hemicellulose) were examined
as per s tandard protocol . Among the two var iet ies , H226 has bet ter s tore of
carbohydrates than CO5 variety
