Abstract

The colour and appearance scores of softy ice cream from safflower milk blended with buffalo milk decreases with increase in the safflower milk in the blend. The flavour scores of softy ice cream tended to decrease with increase in safflower milk in the blend. The overall acceptability scores of softy ice cream tended to decrease with increase in the safflower milk in blend.
