β-Carotene rich fenugreek (Trigonella Foenum graecum) leaf powder was prepared and incorporated in traditional products. Moisture and β-Carotene content of powder was analysed. β-Carotene content was 40, 625 mg/100 gm, on dry weight basis with 5.88% moisture content. Sorption isotherm was also studied for fenugreek powder and results revealed that it can be stored at 32.0% equilibrium relative humidity and at 7.12% equilibrium moisture content. Above this point colour changes and mould growth was observed. Two products were prepared using dry fenugreek leaves i.e. parantha and sag. Sensory characteristic analysed using nine point hedonic scale rated the products as acceptable. The calculated β-Carotene content of the products revealed that the consumption of one parantha (50 gm) or one fourth serving (25 gm) of sag was sufficient to meet the daily β-Carotene requirement (2400 μg/day) for 7–12 years old children.
