Effect of heat processing and chilling of recombined milk prepared from buffalo skim milk powder and fresh skim milk using butter oil on gel filtration profile of fat globule membrance (FGM) proteins on Sephadex G-100 was studied. It revealed that pasteurization, boiling and chilling altered molecular size of minor proteins whereas sterilization resulted in formation of a major protein peak of high molecular size.
