INCIDENCE OF YEAST AND MOULD IN KHOA

Khoa samples from 3 organised dairy plants were collected at different production points namely vat section, package section and production section and analysed for yeast and mould count. The yeast and mould count varied from 40 to 130 cfu/g. The incidence of yeast and mould was higher in summer than in winter. Stored khoa samples had higher yeast and mould count while the Vat section samples had lower count. Saccharomyces sp. was the predominant yeast and Penicillium sp. and Aspergillus sp. were the predominant moulds found in Khoa.
